Make Chicken Soup!
There’s just something about a chicken soup that warms the soul.
This is one of my favorite go to’s when I want something that’s a sure hit and I don’t want to think! Ha!
Manic Meals Monday
One chicken, carrots, potatoes, celery, onion, seasoning sprinkled on chicken, 1 or 2 containers of broth, and rice if you like. Amount of veggies depends on the size of your crock pot and your family’s preference.
Grab your crock pot, plug it in and you’re ready to go.
While your chicken is starting to slow cook, chop your onions, carrots, potatoes and celery. Then add your broth. I add my veggies about 1 1/2 to 2 hours before my finish time depending if you’re cooking on low or high.
You can boil your water and add rice with a tad of butter while your soup is cooking and then scoop it onto your bowl before pouring your soup into it. I really like Lundberg rice. Non-GMO and they have a variety of flavors. We use wild rice often with our soups.
Season with salt and pepper to taste and voila! Dinner is served. 🙂
I usually serve a salad with this as well. I boil 6 eggs to keep in my fridge and ready for a snack, egg salad sandwich, or to bulk up salads.
But why stop there?! Since you’re already indoors hiding from the weather in the kitchen, take it a step further and boil your chicken bones, carcass, and ends of veggies to make stock for the next go around. Waste not, want not!
Add your left overs to a pot and fill with water. Simmer on low for 4 to 6 hours, drain and pour the yummy broth into a glass ball jar and you’ve got a second serving of broth for another meal. Great to have when someone’s not feeling well. I SOOO want to start a bone broth babes club! I want to start making bone broth but need some inspiration. I’ll keep you posted!
